Place chicken in slow cooker. Combine all other ingredients in glass jar or bowl and then pour over chicken. Cook on low for 6 hours or high for 4 hours. When chicken is done, shred or serve whole chicken thighs- your preference!
Notes
This recipe works great with 1.5-2 pounds of trimmed chicken thighs. I have also made it with chicken breasts, but we preferred the texture of chicken thighs.
For lower sodium recipe, reduce soy sauce to ¼ cup and replace the rest with water.
